Any excuse to have pancakes will do in this house. We always start off a special occasion with pancakes for breakfast and also on the odd weekend when we feel like a treat. Shrove Tuesday is the perfect excuse for a pancake feast and a party, especially when you've got kids. We had a mini feast on Tuesday and our Carnival Party is still coming. Usually we go for traditional pancakes with honey, lemon juice, cinnamon and sugar or any combination of the above actually. Sometimes we have the Dutch version (with the filling baked into the pancake), the French version (with the filling wrapped up inside), the healthy version (with fruit baked in or wrapped up inside) or the Scottish version (crumpets in South African speak). On Tuesday we had a pancakes stuffed with a salmon, broccoli and phillidelphia cream cheese filling for the main course, and rainbow crumpets smothered in honey for desert!
